A child is a part of a mother, and a mother’s love can never be measured, it is beyond time and space. One that should be revered and respected the most.

Katlu is a Gujarati sweet dish that is full of goodness and specially prepared when a woman gives birth. Almost all women love it and look forward to trying it when one has a baby. The spices and herbs used to make it have healing and strengthening properties, they help rebuild the body and give her enough strength to nurse and produce milk for the newborn.

Katalo also helps patients after surgery and the elderly, giving them the strength to recover faster and providing warmth to the body even in the winter months.

1 cup fennel seed powder – contains dietary fiber, high iron and vitamin C and has anti-inflammatory properties

1 cup ginger powder – works to support digestion. It breaks down the fats and proteins in food, allowing for easier absorption without gas formation. It also has anti-inflammatory properties and helps generate body heat

1 cup almond and pistachio powder – almonds and pistachios are an important source of protein, fats and minerals. They are a rich source of energy with many health benefits.

1 cup poppy seeds – they are rich in minerals and fiber. They act as pain relievers to some extent.

Every Gujarati family has a tradition of making Katlu Pak for new mothers after the birth of a baby. Having a child is like having another life. So, after the birth of the child, the mother should feed well. We make a lot of dishes for a new mother like raab which is like a soup made of wheat flour, ghee and jaggery and spices, Shira is also made with the same ingredients but with a thicker consistency.

I made a large portion of Katlo Pak, but you can reduce the portion and add spices accordingly. This recipe is almost half and half flour to nuts, seeds and spices. Traditionally, we add dried fenugreek seed powder, which has a very bitter taste. So I thought why spoil such an amazingly tasty pack with a bitter taste, he can eat fenugreek leaves in a vegetable curry or eat a sprouted fenugreek salad or drink 1/2 tsp fenugreek powder with water (smart, no!!) 😀 😀

1. Fry the gund (edible gum) in a little ghee on low heat. It swells and doubles in size in seconds. Remove from the pan after a while. Place in a large bowl and mash a little with any flat-bottomed bowl.

2. Dry the roasted flax seeds, cumin seeds and cumin seeds separately on a low heat and make a powder. Dry the roasted almonds on low heat and coarsely ground. Grated coconut dry-roasted on low heat for one minute. Roasting all these ingredients enhances the flavor. Add flex seed powder, cumin powder, shell powder, almond powder, grated coconut, ginger powder, pempremoli and catallo powder along with crushed fried gundi and mix everything well.

3. Heat 3 cups of ghee in a wide, heavy-bottomed pan. When the ghee is slightly hot, add the flour (sift the flour before using). Fry on low or medium heat, stirring constantly. If the mixture feels dry, add a little ghee. The mixture should look runny. Let it cook until the mixture turns golden brown and the house is filled with fragrance. It takes about 15-20 minutes. When the flour is cooked, turn off the heat.

4. Turn off the heat and then add the ginger. Do not move the pan as the heat from the hot coil will help melt the ginger. Continue to stir and allow the jaggery to melt, it will take a minute or 2. Then add the spice mixture and stir well until everything is combined. If the mixture feels dry at this stage, add melted ghee and mix. Tip: If you melt the jaggery into the flour mixture while the heat is still on, there is a chance that the jaggery will overcook and be difficult to break when you are done.

5. Immediately spread the mixture on a greased tray or thali. I used one tray and one Thali as I had a huge batch or you can use a large pizza tray. The thickness should be about 1/2 inch. Level the mixture with a flat-bottomed bowl or a flat spatula. Sprinkle the surface with grated coconut, poppy seeds and smooth with a spatula. After a few minutes, when the mixture has cooled slightly, cut into square pieces with a knife. Instead, you can make a barn. Let the hot mixture cool a little and when it is comfortable to handle, make the lado.

6. When it’s completely cooled, carefully remove all the pieces from the tray and store in an airtight container (remember to taste before storing, they taste best when still a little warm 😛 😛 ). No need to refrigerate, it will keep at room temperature for at least 2-3 weeks.

Catlo Pak has incredible health benefits and great flavors from all the spices. It’s so soft it melts in your mouth. You can add poppy seeds, fenugreek seeds and sesame seeds. This is a very hearty dish. Share with your family and friends so that someone in need can enjoy it.
