Now I will be completely honest with you and tell you that I make menudo once a year. Why? Because I absolutely cannot stand the smell of cooking tripe. Fair warning: it’s not a good perfume. And yes, I cleaned it well in several changes of water, with salt and lime, and rinsed again. That’s just the nature of tripe. It smells.
