However, the recipe here is a Filipino version, a delicious stew of pork or chicken, liver, potatoes, carrots, peppers, garbanzo beans, and grapes in a rich tomato sauce. A popular dish for family dinners and special occasions, it is usually enjoyed with steamed rice and occasionally with pandesal.

Whether it’s Mexican history or not, I don’t know. But ask any Mexican who knows how to cure a hangover, and menudo will be the answer. Along with a large glass of water for hydration, it certainly can’t hurt. Or you can choose to grind the hair of the dog. You know, if this is more your style.
But that’s not the only reason people love menudo. It is a very common breakfast in Mexico, although in some parts of the country, it goes by the name mondongo. B vitamins are good for the whole body (not just those dealing with cancer). You’ll know it’s true if you’ve seen the menudo two days, after taking it out of the fridge. It looks like a bowl full of jelly meat with guts and bones. hmmm…
Now I will be completely honest with you and tell you that I make menudo once a year. Why? Because I absolutely cannot stand the smell of cooking tripe. Fair warning: it’s not a good perfume. And yes, I cleaned it well in several changes of water, with salt and lime, and rinsed again. That’s just the nature of tripe. It smells. But if you can get past the initial simmer, once you’ve added the legs, bones, and other aromatics, the better.

And yet in the true spirit – I don’t even like it that much. I tried, but I just didn’t. I did it for my husband. He loves you. He was born and raised in Mexico. You should see him and his father go to town on it. Most people remove the bones and gristle and fat once it’s cooked – but at their request, I don’t. These are their favorite parts.
Hey, if they’re happy, I’m happy. Who knows, maybe one day I’ll grow to love you. Of course, after 15 years of trying already, maybe I won’t. But that won’t stop me from making an annual pot for my loved ones to enjoy.

Filipino Menudo Two Ways
Menudo is usually served with tortillas or other bread, such as bolillo. It is often cold and reheated, resulting in a more concentrated flavor. The popularity of menudo in Mexico is such that Mexico is a major export market for tripe from US and Canadian beef producers.
Pork (aka pork, pork) is very popular. They are also, along with pork, the most expensive cut of pork. They are lean, tender, and boneless.
Remove excess fat. Put in a glass with 3 or 4 cups of water (menudo releases water during cooking) and all onions and cook at 350 degrees for 2 or 3 hours or until menudo is soft when pierced with a fork.
Preheat the oven with a frying pan. Preheat the oven to 425 degrees Fahrenheit (218 degrees Celsius) and heat 2 tablespoons (30 ml) of oil or butter in an ovenproof skillet over medium-high heat. If you don’t have an oven-free skillet, you can use an oven-free skillet to cook the meat.
Menudo Rojo (red Menudo) Recipe
Instructions Rinse the meat, cut the legs into bite-sized pieces, cut the legs into pieces, cut the neck bones into pieces.
